Banana, blueberry and walnut loaf
The combination of blueberries and bananas, makes this is a sweet and dessert-like loaf. It is perfect as part of a healthy breakfast or snack, served with some almond butter or my chia jam. The blueberries are one of the highest antioxidant fruits you can readily buy and the almonds and walnuts offer some healthy protein and fat to keep you feeling full.

Ingredients
- 3 ripe bananas, mashed
- 3 organic eggs
- 2 tbsp brown rice, malt syrup or date syrup (optional)
- 1/2 tsp vanilla extract
- 180 g almond flour
- 30 g finely chopped walnuts
- 150 g blueberries
- tbsp gluten free oats
- 3 tbsp coconut oil, melted
Method
- Preheat the oven to 180 degrees and line a loaf tin with parchment paper
- Crack the eggs into a mixing bowl with the mashed banana, slowly adding all the other ingredients except the blueberries
- When the mixture is combined, slowly fold the blueberries in and sprinkle with some gluten free oats
- Bake in the oven for 50-60 mins
Tip
Be sure to use ripe rather than green bananas to give added sweetness which might help you avoid the syrup.
