Spiced sweet potato and lentil soup
This nourishing and warming soup is an easy way to get in your daily dose of vitamin A. Well known for its healing powers of both the skin and the gut wall, you can find 3 times your recommended daily dose in just one sweet potato.

Ingredients
- 2 tsp cumin seeds
- pinch chill flakes
- 1 tbsp butter (or avocado oil for a dairy-free alternative)
- 2 large sweet potatoes, peeled and chopped
- 140g split red lentils
- 1l vegetable stock
- 125ml milk (or oat milk) - optional
- 2 tbsp roasted buckwheat groats
Method
- Heat a large saucepan and dry-fry the cumin & chilli for 1 min until they jump about in the pan
- Add the butter, sweet potato, lentils, stock and milk. Bring to the boil & simmer for 15 mins/ until lentils swell
- Whizz the soup in a blender, season to taste and finish with some extra virgin olive oil and buckwheat groats
Tip
You can always switch the roasted buckwheat groats for some mixed seeds.
