Ingredients
For the salad
- ½ a head of purple cabbage sliced
- 2 carrots grated
- 1 medium red onion diced
- 1 tbsp mixed seeds to serve
For the dressing
- 60ml balsamic vinegar
- 30ml olive oil
- Salt and pepper to taste
Method
- Mix the ingredients for the dressing
- Place all the ingredients for the salad into a bowl and pour the dressing over it at least one hour before serving to ensure the cabbage has softened and is easier to digest
- Top with mixed seeds to serve
Tip
This salad can taste even better after 24 hours, so make a large batch and enjoy leftovers the following day.
