Tangy red cabbage and carrot slaw

Ingredients

For the salad

  • ½ a head of purple cabbage sliced
  • 2 carrots grated
  • 1 medium red onion diced
  • 1 tbsp mixed seeds to serve

For the dressing

  • 60ml balsamic vinegar
  • 30ml olive oil
  • Salt and pepper to taste

Method

  1. Mix the ingredients for the dressing
  2. Place all the ingredients for the salad into a bowl and pour the dressing over it at least one hour before serving to ensure the cabbage has softened and is easier to digest
  3. Top with mixed seeds to serve

Tip
This salad can taste even better after 24 hours, so make a large batch and enjoy leftovers the following day.
