Hake fried black rice

Black rice gets its deep purple/black colour from the anti-inflammatory pigment, anthocyanin. Compared to most other types of rice, the black variety is one of the highest in protein and fibre, meaning it may help support weight loss.

Ingredients

  • 1 tbsp ghee butter (or avocado oil as a dairy free option)
  • 1 glass of black rice
  • 3 hake fillets cubed
  • 3 tsp tamari sauce
  • 3 tsp sesame oil
  • 1 medium onion diced
  • 3 cloves crushed garlic
  • 100g green beans chopped
  • 100g broccoli chopped finely
  • 100g mushroom chopped
  • Cherry tomatoes and rocket salad to serve

Method

  1. Soak the rice for 2 hours in water
  2. Marinate the hake in only 1 tsp of tamari sauce and 1 tsp of sesame oil and leave to stand for 1 hour in the fridge
  3. Drain the rice and place in a pan and cover with fresh water. Bring to boil on a medium heat for around 10 mins till the water has begun to evaporate
  4. Lower the heat and cover the pan with a lid and cook for a further 20 mins till the rice is cooked
  5. In a frying pan, heat the ghee or oil and fry the onion till softened
  6. Add the garlic and vegetables and half cook for 2-3 mins
  7. Add the cooked rice, and remaining tamari and sesame oil to the frying pan and stir for 2 mins
  8. In a separate pan, cook the hake for 3min and once cooked, add to the rice and mix well (the hake should break up nicely)
  9. Serve immediately with tomato and some rocket leaves

Tip
You can use pretty much any flaky fish instead of hake. Cod is a good alternative.
