This nourishing green soup is a great way to detox your liver whilst boosting vitamin C, fibre and antioxidants. Soups are a great source of nourishment for those struggling with poor digestion and gut function.

Ingredients
- 1 tbsp ghee or avocado oil (as a dairy free alternative)
- 1 large onion diced
- 2 cloves of crushed garlic
- 1cm ginger chopped
- 1 chopped leek
- 1 whole large broccoli head sliced
- 200g green beans sliced
- 100g spinach
- 100g frozen green peas
- 1 cup bone broth (or vegetable broth)
- 1 tsp mixed herbs
- 1 tsp yeast flakes (I like Marigold Engevita)
- Salt and pepper to taste
Method
- Fry the onion in the ghee or avocado oil till golden brown
- Add the garlic and ginger and fry for a further 3 mins
- Stir in the leek and continue to fry for 2 mins on a medium heat, stirring well
- Add the broccoli, green beans, spinach, peas, bone broth and mixed herbs and allow to simmer for 5-10 mins
- Add the yeast flakes, salt, pepper and blend
