Crunchy nutty granola

Supermarket bought cereals and granolas are often packed with processed fats and sugars. This healthy granola recipe is simple to make and provides a quick and easy breakfast for those rushed mornings. The nuts and seeds contain healthy monounsaturated fat, omega-3 and omega-6 essential fatty acids. Unlike commercial granolas, keeping the temperature relatively low, helps preserve the essential fats.

Ingredients

  • 120g gluten-free porridge oats
  • 120g buckwheat flakes
  • 50g roughly chopped almonds
  • 50g roughly chopped walnuts
  • 25g roughly chopped pecans
  • 25g roughly chopped brazil nuts
  • 50g sunflower seeds
  • 50g pumpkin seeds
  • 50g linseeds
  • 30g chia seeds
  • 1 tbsp ground cinnamon (preferably ceylon)
  • 1 tbsp cacao powder
  • 4 tbsp melted coconut oil
  • 120ml unsweetened apple juice (optional)

Method

  1. Preheat the oven to 150 degrees celsius
  2. Place all the dry ingredients in a mixing bowl
  3. Mix the melted coconut and optional apple juice together and pour over the dry ingredients. Stir well to form a moist mixture adding a little water if needed
  4. Spread the mixture thinly onto a baking tray and bake for 40 minutes until golden, stirring occasionally
  5. Leave to cool and store in an airtight container for up to 2 weeks

Tip
Enjoy with with plain kefir yoghurt or if dairy is an issue for you, coconut yoghurt or unsweetened dairy free milk work well too.
